Tasty Tuesday - Spinach Lasagna

Growing up every lasagna we had was vegetarian. I remember eating lasagna in college sometime (when I was a vegetarian) and being in total shock that there was meat in it! I mean who would do such a thing! My friends had a good laugh over it. So I'm sure you could substitute meat for the spinach (I really don't know how much), but spinach is so good for you!

Spinach Lasagna - 9 servings

  • 2 eggs (beaten)
  • 16 oz ricotta cheese
  • 1 pkg (10 oz) frozen spinach, thawed and drained!
  • 3 cup mozzarella cheese
  • 9 lasagna noodles, cooked (or buy the ones that don't need cooked, most are the same price)
  • 26 oz spaghetti sauce
  • optional: 1/2 cup Parmesan cheese
1. Heat oven to 350 degrees
2. Mix eggs, cottage cheese, spinach and 2 cups of mozzarella (and 1/4 cup parmesan) in a large bowl.
3. Layer - 1 cup sauce then 3 noodles, then 1/2 the cheese mixture in a 13x9 pan and repeat.
4. Top with the remain noodle, then sauce, then cheese.

Bake 45 minutes then let stand for 10.
