Spinach Lasagna - 9 servings
- 2 eggs (beaten)
- 16 oz ricotta cheese
- 1 pkg (10 oz) frozen spinach, thawed and drained!
- 3 cup mozzarella cheese
- 9 lasagna noodles, cooked (or buy the ones that don't need cooked, most are the same price)
- 26 oz spaghetti sauce
- optional: 1/2 cup Parmesan cheese
2. Mix eggs, cottage cheese, spinach and 2 cups of mozzarella (and 1/4 cup parmesan) in a large bowl.
3. Layer - 1 cup sauce then 3 noodles, then 1/2 the cheese mixture in a 13x9 pan and repeat.
4. Top with the remain noodle, then sauce, then cheese.
Bake 45 minutes then let stand for 10.
