Tasty Tuesday - Stuffed Zucchini Boats

So I must have totally blanked out last week because I completely skipped Tasty Tuesday! What was I thinking???

Stuffed Zucchini Boats - 4 servings
  • 2 large zucchinis
  • 3/4 cup shredded mozzarella cheese
  • 1 sm. tomato, chopped finely
  • 10 crackers finely crushed (Ritz, wheat thins, etc.)
  • 1 tsp. dried basil
1. Preheat oven to 375*.
2. Cut zucchini in half lengthwise. Scoop out centers, leaving about 1/4 inch thick sides (melon scoop works amazing!).
3. Chop pulp and place in a medium bowl with the chopped tomato, cracker crumbs, basil and 1/2 cup of cheese. Carefully mix, then scoop back into zucchini "boats" (shells).
4. Place the zucchini into a 9x9 baking dish and top with the remaining cheese.
5. Bake for 15 minutes, or until heated.

This sounds amazing. What exactly is a serving for this dish? Half a zucchini 2 halves?

Half the zucchini is a serving, which is one "boat"

What a great idea! We have massive amounts of zucchini right now from our garden so I am always looking for recipes. Thank you!

you should try adding some brown rice to the recipe, omit the crackers, add Italian bread crumbs... its another good way. Love stuffed zucchini!

I'll be sure to add you to our list! Yeah, so happy to have a bunch of people!
