Stuffed Zucchini Boats - 4 servings
- 2 large zucchinis
- 3/4 cup shredded mozzarella cheese
- 1 sm. tomato, chopped finely
- 10 crackers finely crushed (Ritz, wheat thins, etc.)
- 1 tsp. dried basil
2. Cut zucchini in half lengthwise. Scoop out centers, leaving about 1/4 inch thick sides (melon scoop works amazing!).
3. Chop pulp and place in a medium bowl with the chopped tomato, cracker crumbs, basil and 1/2 cup of cheese. Carefully mix, then scoop back into zucchini "boats" (shells).
4. Place the zucchini into a 9x9 baking dish and top with the remaining cheese.
5. Bake for 15 minutes, or until heated.

Half the zucchini is a serving, which is one "boat"

you should try adding some brown rice to the recipe, omit the crackers, add Italian bread crumbs... its another good way. Love stuffed zucchini!
