Tasty Tuesday - Spinach Lentil Soup

Spinach Lentil Soup - 6 servings
  • 1+ cup carrots, chopped (more is better in my opinion)
  • 1 onion, diced
  • 1 Tbsp olive oil
  • 6 cup water (less for a thicker soup)
  • 1 1/4 cup dried lentils, rinsed
  • 1 (10 oz) spinach, thawed
  • 1/2 cup corn (again more is better)
  • 1/2 cup red pepper (or more)
  • 1 (16oz) salsa
  • OPTIONAL - 1 lb ground meat (cooked)
1. Saute carrots and onions in oil. (Cook meat, if using).
2. Add water, lentils, salsa, corn, and pepper. Bring to boil. (then add meat).
3. Reduce heat, cover and simmer 50-60 minutes until lentils are tender
4. Stir in spinach, simmer 5-10 minutes.

1 1/2= serving
