Tasty Tuesday - Granola Bars

Granola Bars - 16 servings

  • 2 cups old fashion oats (NOT instant)
  • 1 cup nuts (I've used peanuts and/or almonds)
  • 1/2 cup raisins (or any dried fruit)
  • 3/4 cup of chocolate chips (peanut butter or cinnamon chips are even better)
  • 1/4 cup sunflower seeds
  • 1/2 tsp ground cinnamon
  • 2 large eggs
  • 1/3 cup honey
  • 1 tsp vanilla extract
1. Preheat oven to 350*. Lightly grease an 8x8 pan.
2. Dump nuts, raisins, seeds, choco chips, and cinnamon in food processor and pulse.
3. In a large bowl whisk the eggs, honey and vanilla.
4. Add the dry mixture and oats to the liquid mixture. Stir until completely mixed.
5. Spread into the baking pan, making sure it's even and smooth. (I normally press it with the back of a fork or spoon.)
6. Bake about 15-18 minutes.
7. Let cool completely before slicing.

(Once you've made it, go creative...peanut is a great add in, just reduce the amount of honey)

I calculated the cost per serving once, and I was astonished at how cheap it was. It's a lot healthier than buying prepackaged bars, and a lot more cost efficient also!

I made these the other day and they taste great, but are fall apart really easily. When you pulse all the nuts and chips together, do you get them really chopped up? I'm wondering if that's why mine didn't stick together. Maybe peanuts were too big or something?

Glad you tried them! I have to problem sometimes with them falling apart too, and yes, I believe if the pieces are too big they won't hold together. You might want to try pulsing the nuts and larger items by themselves, and then add in the others.

Or you could trying baking it a little longer, or maybe add a little bit of peanut butter.

I tweak mine every time I make it because I'm never adding the exact same ingredients.
