Tasty Tuesday - Banana muffins

Banana Muffins - serves 12
  • 1 1/2 cups all-purpose flour (whole wheat)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 over ripe bananas, mashed
  • 1/2 cup white sugar
  • 1 egg, lightly beaten
  • 1/3 cup butter, melted
  • 1/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter
1. Preheat oven to 375*. Lightly grease 12 muffin cups.
2. In a large bowl, mix together the flour, baking soda, baking powder and salt.
3. In another bowl, mash the bananas and beat in the sugar, egg, and melted butter. Stir the banana mixture into the flour mixture just until moistened.
4. Spoon batter into prepared muffin cups.
5. In a small bowl, mix together the brown sugar, 2T flour, and cinnamon. Cut in 1T butter until mixture resembles course cornmeal. (I always end up with extra for some reason). Sprinkle over muffins.
6. Bake 18-20 minutes.


There are plenty of foods you can add to it to spice it up, like chopped walnuts, or cranberries. I just like how simple it is. I always have bananas laying around :-)

I'm low on food until Friday. I know I have frozen over ripe bananas in the fridge. Good recipe. I'll give it a try!
