Tasty Tuesday- Mexican Lasagna

As promised, I will provide a recipe every Tuesday.

Mexican Lasagna - 6 servings
  • 1 1/2 lb ground turkey
  • 4 oz Velveeta
  • 3/4 cup salsa
  • 6 tortillas
  • 1/2 cup shredded cheese (I like cheddar or mexican/taco)
Heat oven to 400*

1. Brown meat and drain fat. Add 1/4 cup water and the Velveeta - stir until melted.
2. Remove from heat and stir in salsa
3.Grease 8-inch square dish. Spread 1/4 meat mixture, top with 2 tortillas. Repeat 2 times. Top with remaining mixture and sprinkle with cheese.
4. Cover tightly with foil.

Bake for 30 minutes - remove foil and let it stand 5 minutes.

(These will vary depending on the fat % of your meat and cheese, and turkey vs beef)
