- 1 1/2 c. flour
- 3 T. cocoa (extra dark is the best)
- 1 tsp baking soda
- 1 c sugar
- pinch of salt
- 5 T. oil
- 1 T. vinegar
- 1 tsp vanilla
- 1 c. cold water
2. Make 3 wells in the dry mixture. Pour the oil into one, vinegar into the other, and vanilla into the third. Pour water over entire pan and mix well with a fork.
3. Bake 30 minutes on 350*
***Double the recipe for an 9x13 cake
Instead of icing, you can sprinkle with confectionery sugar for a quick and healthier topping.

Have you ever checked out HungryGirl? It is awesome. It is this great website and book about healthy food. It takes food you love and replaces it with a healthy alternative. I made so amazing choc. muffins with pumpkin rather than oil and they were wonderful.
