Tasty Tuesday Black Bean Soup

Black Bean Soup - 4 servings (6 cups total)
  • 1 cup diced carrots
  • 1 cups diced celery
  • 1/2 onion diced
  • 1 garlic clove minced
  • 1 tbsp olive oil
  • 3 cups cooked or canned black beans
  • 4 cups veggie stock
  • 1-6oz can tomato paste
  • 1.5 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp dried thyme
1. Combine carrots, celery, onion, garlic and oil in a large pot & saute over medium heat for 5 minutes
2. Stir in beans, stock, tomato paste and spices.
3. Cover and simmer 20 minutes, or until veggies are cooked.
4. Garnish as desired (I love shredded cheese) and ENJOY!

*If you need to have meat in a meal, it is very easy to add anything that is already cooked (chicken, ham etc.) with the beans and spices
