Tasty Tuesday- Taco Soup

This stuff is amazing!!! It is super filling and great for cold wintry days.

Taco Soup - serves 6

  • 1 lb ground turkey
  • 1, 14oz can kidney beans
  • 1, 14oz can black beans
  • 1, 14oz can pinto beans
  • 1, 28oz can crushed tomatoes
  • 1/2 cup frozen corn
  • 1/2 white onion chopped
  • 3 cloves garlic chopped
  • 1 packet ranch mix
  • 1 packet taco mix
1. Saute onion and garlic in a little bit of olive oil in a large pot until the onions are translucent.
2. Add in ground turkey and taco mix. Cook until meat is browned.
3. Drain bean (I normally rinse too) and add to pot. Add the crushed tomatoes, ranch mix and corn.
4. Add 1/2 cup water (more if you like it soupier, less if you like it thick as a stew)
5. Simmer for 20 minutes.

*I sprinkle mine with a bit of cheese, hubby adds sour cream to his.
